Our Story

We are a small batch distillery on Tattarang Farm – 120-acres of tamed wilderness at the southern tip of Western Australia’s Darling Scarp. Here, wide ranges are dissected by winding rivers and blanketed by magnificent bushland.

The bush is our backyard.

Led by a Distiller, a Chef and a Horticulturalist, our process is underpinned by a true grain to glass philosophy. The majority of the ingredients in our gins and vodka are foraged, grown and crafted by us, on site.

Forage to Flavour

Traditional distilling, with a West Australian twist.

We source WA spring water from our pure natural springs. We forage for wild and native botanicals. Blossoms from the Scarp’s spectacular dark red marri gums are our signature ingredient, along with other unique local botanicals like wild aniseed, lavender and bush lemons.

We hand-craft in small batches with skill and attention to detail.

The botanicals we have chosen aren’t the only thing that make our gin unique. Our distilling methods unleash not only the foraged flavour, but also the botanicals’ fresh perfume with every pour.

    A Gin for everybody. Our adaptation on a classical London Dry Gin with an Australian twist. Juniper, bush lemon, coriander, lemon myrtle, samphire and native mint. This Gin comes straight from the heart. Enjoy traditionally with Tonic and a slice of your favourite citrus.

    This Butterfly Pea Flower Gin is citrus forward with bush lemons at the forefront. Rounded off with the subtle flavour and aroma from Butterfly Pea Flowers, this spirit gives a unique approach to a London Dry style Gin. Watch the magic as it instantly changes colour when mixed with Tonic.

    Our homage to the wonderful bush lemons that grow on the property. Small batch bush lemon infused Limoncello at 30% with loads of citrus, hints of juniper and naturally sweetened with our raw red gum honey.

  • SINGLE MALT WHISKY

    Championing barley from the Western Australian Wheat Belt, our single malt whisky has spent a minimum of 4 years ageing in a triple barrel combination of Ex-Margaret River French Oak, Ex-Bourbon American Oak and finished in a Ex-Russian Imperial Stout barrel. A unique combination culminating in a smooth, buttery pallet of toffee, oak, vanilla and a hint of dried fig with lingering earthy notes of molasses and milk coffee. Limited release

GENESIS

It all started with the marri gum flower. Inspired by its significance in Noongar culture, where it is used as a source of honey or infused in water to make a sweet drink, we discovered an amazing botanical on our doorstep.
